Trigger Warning If you have a kid that doesn’t like tomatoes or beans, this one isn’t for your whole family.

This recipe is one almost the whole family loves. We found this recipe years ago and have made some small tweaks through the years like adding avocado, sour cream, cheese as toppings. We were searching for crock pot recipes that wouldn’t completely dry out chicken. With a quick prep and easy cleanup, this was a winner to get a quick dinner on the table!

Over the years, we’ve also used varying styles of seasoning for this recipe. Two of our favorites are Penzey’s Taco Seasoinging or Kinder’s Carne Asada. Carne Asada can sometimes have a bit too much spice for those that don’t like spicy food. We enjoyed it with some chips while we played a board game together.

Instructions

1. Wash your beans (1 minute)
   • Pinto Beans
   • Black Beans
2. Chop the Onion (2 minutes)
   • 1 Medium Onion
3. Put it in the Pot (5 minutes)
   • Bonus Tip - For extra fast cleanup, we use a crock-pot liner.
   • Put the corn, onion,rotel, beans, ranch seasoning,taco or carne asada seasoning, and chicken bouillon in the crock pot
   • Stir and place the chicken on top.
4. Cook (4-6 Hours on low)
   • Set your crock pot on low and forget it
5. Final touches
   • Remove the chicken and shred.
   • Place cubed cream cheese in pot and stir.
   • Put chicken back in and stir it up.
   • Wait 30 minutes.
6. Serve
   • Add your favorite toppings. Anything, including avocado, cheese, and sour cream.
